Some days really feel more daunting than others.  This is one of those days.  A joyful life is not always, if ever, about rainbows and unicorns.  What it is is being in the moment, taking the next right step and most important, self care.  So today, when you get home, snuggle up in a much loved robe or some such coziness, and make this super easy, super comforting, super yummy creamy mushroom soup.  Then treat yourself to a big, steaming mug of it.  (note – if you don’t have mushrooms, substitute whatever you do have, there’s always something).

Creamy Mushroom Soup

1 small onion

2 garlic cloves, minced

1 package of white mushrooms, chopped

1 carrot, chopped

1 rib celery, small dice

1 Tablespoon fresh thyme (or a teaspoon of dried)

kosher salt

freshly cracked black pepper

½ teaspoon Worcestershire sauce

2 Tablespoons olive oil

2-4 cups vegetable stock (you can substitute chicken or whatever you have on hand)

1/2 cup cream or milk

  • Sweat onion, celery, carrots and garlic in olive oil until soft and sweet
  • Add mushrooms and sauté
  • To this add stock and fresh thyme
  • Cook until carrots are tender
  • Add cream and puree
  • Season with salt, pepper and Worcestershire
  • Adjust consistency with more stock or milk

If you prefer it be non dairy but still creamy, replace cream with half a block of silken tofu, or even a potato (but then you have to cook it with the other veg)
